Kodiak cake muffin magic
Basically this is aversatile recipe. I will include the basics on how to make the muffins but always consider the type of dish you are using and such. Sometimes I use muffin tins sometimes I use a pan.
3 cups Kodiak cake mix
1 1/4 cups almond milk
3 eggs (most times I add egg whites to increase protein, 1/2 a cup id say)
1 teaspoon baking powder
Combine, preheat oven to 350 fill muffin tins 3/4 full. Here's the deal, I followed this the first time and they didn't cook all the way through to follow the above and then take them out test them and keep adding time till they are done.
keep in mind this makes alot more than 6 servings. The point is to eat about two muffins as a snack or meal. The macros for each if you break it up into 6 servings is: 20g p, 30g c, 4gf
Flavors Ive made:
Pumpkin: add 1ish cans to the above
Coconut banana: 2 Bananas 1/2 c unstw. shredded coconut to above
Carrot cake: 1 1/4c shredded carrots, 1/4c cream cheese (preferably an organic grassfed but whatevs)
Chocolate chip: add 1 cup of Carob Chips (find those at a whole foods type place usually)
Apple cinnimon: duh
